摘要
测定槟榔红色素(areca red pigment,AP)对DPPH·和·OH的清除能力、对脂质体过氧化的抑制能力、对Fe2+的络合能力,并测定其还原能力。结果表明:槟榔色素对DPPH·、·OH的清除能力较强;对脂质体过氧化的抑制能力很强,抑制率高达79.84%;与VE、没食子酸(gallicacid,GA)、BHT相比,槟榔色素的还原力、对Fe2+的络合能力较弱。说明槟榔红色素是较好的抗氧化剂。
Red pigment was extracted from betel nut(Areca catechus L) and its antioxidant activities was tested, including reducing power, DPPH radical scavenging activity, hydroxyl radical scavenging activity and so on. The areca red pigment showed a higher DPPH radical scavenging activity than BHT but lower than VE and gallic acid(GA) ; a higher hydroxyl radical scavenging activity than GA, VE and BHT; a high inhibitory activity against peroxidation of liposomes with an inhibiting rate of 79.84%, similar to that of GA, but highly significantly different from that of Vc and BHT, and lower metal chelating activity and reducing power than GA, VE and BHT. This indicates that the areca red pigment is a good antioxidative.
