摘要
潲水油是食品领域的隐形杀手,严重危害了人们的健康。文章较为全面地概述了潲水油的产生和危害,并从理化检测和仪器分析检测两方面综述了目前国内快速鉴别检测食用油掺入潲水油的方法,最后对检测方法进行展望。
Waste edible oil brought back on market is the invisible killer, which did serious harm to people＇s health. The paper summarized the mechanism and harm of waste edible oil, outlined the testing items and analysis methods to distinguish waste edible oil at present. Finally, simple, fast and practical methods to distinguish and detect waste edible oil were prospected.
