摘要 从Viili中分离得到两株具有较高产胞外多糖能力的乳酸菌,其产多糖量可达111.7mg/L和106.5mg/L。对菌株I、菌株II进行16SrDNA序列分析及生理生化鉴定。16SrDNA序列测序和API50CHL试纸条鉴定结果表明:两株菌分别为Lactobacillus paracaseissp.paracasei和Lactobacillus delbrueckii ssp.bulgaricus。 Two exopolysaccharide (EPS)-producing lactic acid bacterial isolates (strains I and II) isolated from viili were identified by 16S rDNA sequence alignment and biochemical and physiological identification with AP150 CHL kits and their EPS-producing abilities were studied. Strains I and II were identified as Lactobacillusparacasei ssp. paracasei and Lactobacillus delbrueckii ssp. bulgaricus, and the EPS yields in skimmed milk fermented by them were 111.7 and 106.5 mg/L, respectively.
