摘要
为探讨湿磨油菜籽水酶法提油工艺中细胞壁多糖酶和碱提的作用机理,使用扫描电镜观察油菜籽细胞在酶解过程中超微结构的变化,并对不同pH乳状液体系的部分理化性质进行了研究。结果表明,以果胶酶为主的细胞壁多糖复合酶可以有效破坏油菜籽细胞壁,释放细胞内容物;在碱性pH环境体系中,乳状液油滴表面结合蛋白质少,因此可能有利于蛋白酶的作用和油滴聚集。
For investigating the mechanisms of carbohydrase treatment and alkaline extraction during aqueous enzymatic extraction of rapeseed oil from wet milled rapeseed, the changes of rapeseed cell ultra-structure during enzyme hydrolysis were pH conditions stroy rapeseed droplets in em were studied. The results observed using SEM and the properties of emulsions in different showed that the complex enzyme (mainly pectinase) could de- cell wall effectively and thus released cell contents. The amount of protein bound to the oil ulsions was less at alkaline pH,which was possibly in favor of the proteinase hydrolysis and the aggregation of oil droplets.
