福建铁路居民的膳食营养状况

摘要 目的:了解福建铁路居民的膳食营养状况。方法:采用三日称量记帐法。结果:福建铁路居民每标准人每日摄入的粮谷类、豆类、蔬菜水果类分别为447、90、331克,摄入的动物类食物为335克,其中肉类、奶类、蛋类、鱼贝类分别为149、43、53和90克,摄入纯热能类食物为66克,膳食粮谷类、豆类、蔬菜水果类、动物类和纯热能食物提供的热能分别占每日膳食总热能的57.4%、2.2%、3.8%、23.6%和13.0%。结论:福建铁路居民3~6岁、7~17岁和18~59岁三个年龄组除钙摄入量仅占供给量标准的49%外,其余营养素摄入量基本达到或超过供给量标准。而60岁以上老年人绝大多数营养素摄入量未达到供给量标准。 OBJECTIVE To study the dietary and nutritional status of railway residents in Fujian. METHODS Weighting and 24-hours dietary intake recall method. RESULTS The average intake of food per man (reference) per day was: cereals 447 g, beaus/peas 90 g, vegetables/fruits 331 g, animal food 335 g (which consists of meat 149 g, milk 43 g, eggs 53 g and fish/shellfish 90 g), calories food 66 g. The energy of the food is 57. 4%, 2. 2%, 3. 8%, 23' 6% and 13. 0% respectively. CONCLUSION Except for calcium which accounted only for 49% of RDA. The intake of nutrients for different age groups met the Recommended Dietary Allowances (RDA) and for the aged 60 or more did not meet the RDA yet.
