新疆玛纳斯县赤霞珠葡萄最佳采收期的研究 被引量:25

摘要 对新疆玛纳斯县2008年赤霞珠葡萄的成熟度、酚类物质等的研究结果表明:在葡萄成熟过程中,随葡萄含糖量不断增加,含酸量不断减少,糖酸比逐渐增大。葡萄汁中总酚和单宁含量逐渐减少,而葡萄皮中总花色素苷含量逐渐增加。确定酿造优质干红葡萄酒时,赤霞珠葡萄的最佳采收期为9月13日,葡萄成熟度36.6,葡萄汁中总酚、单宁及葡萄皮中总花色素苷的含量依次为0.94g/kg、0.929g/kg、2.264g/kg。 The maturity and the phenols of Cabemet Sauvignon grape from the Manasi County in Xinjiang in 2008 during the ripping process were studied in this paper. The results showed that the acid content, the levels of total phenols and the Tannin in grape juice were decreased with the increment of sugar content, while the content of total Anthocyan in grape skin was increased. September 13 was the best harvest time for Cabemet Sauvignon grape, and the grape maturity was 36.6 at that time. The content of total Phenols and Tannin in grape juice and the level of total Anthocyan in grape skin were 0.94 g/kg, 0.929 g/kg and 2.264 g/kg, respectively.
