摘要
从同一饲养条件下持续育肥的屠宰牛中,分别取草原红牛和含1/4、1/2利木赞血的草原红牛各4头牛背最长肌样品,对肉的常规营养、脂肪酸、氨基酸进行测试与分析,结果表明:除蛋白质、脂肪和油酸含量草原红牛与含1/2利木赞血的草原红牛间有规律的一定变化外,其余各项均变化不大;而草原红牛与1/4利木赞血的草原红牛间所有指标基本相同。总体来看,导入利木赞血后对草原红牛的肉质营养及风味没有不利的影响。
Under the same feeding conditions, 12 young bulls calves of China Steppe Red Cattle, China Steppe Red Cattle with 1/4 and 1/2 limousin were divided into 3 groups with 4 calves in each group. The nutrients, fatty acids, and amino acids of longissimus dorsi samples from 3 groups were analyzed. The results showed that there was no significant difference between China Steppe Red Cattle and 1/4, 1/2 crossed cattle. To sum up, there were no adverse effect on the quality and nutrition of meat of China Steppe Red Cattle crossed with limousin.
