摘要
本文综述了乳酸菌的生理活性特点、影响乳酸菌浓缩培养的因素，以及浓缩培养的方法，最后对乳酸菌浓缩发酵剂存在的问题和发展方向进行了简要的分析。
The physiological activity, factors effected the culture of concentrated lactic acid bacteria starter, and the preparation method were reviewed in this article. The existing problems and development of concentrated lactic acid bacteria starter were also analyzed.
