Slaughtering Characteristic of Growing Hainan Black Goats

摘要 选用12只海南黑山羊断奶羔羊(约4月龄),在舍饲条件下补充精料粗蛋白10.17%,代谢能9.89MJ/kg,饲养90d后屠宰,测定海南黑山羊屠宰性能和肉品质。经测定,宰前活重、胴体重、净肉重、屠宰率和净肉率分别是21.5kg、10.14kg、7.13kg、47.07%、33.14%。试验结果表明,生长期海南黑山羊具有较高的屠宰率和良好的产肉性能,肉质的各项指标均在正常范围内。 Twelve stall-feeding weaned growing Ha inan black goats at the age of 4 months old were chosen and then fed for 90 days with daily concentrated feed containing 11.17% crude protain and 9.89MJ/kg metabolic energies before slaughtered. Slaughter characteristics and meat quality were then determined. The results showed that pre-slaughter weight, carcass weight, net meat weight, dressing percentage, and lean percentage were 21.5 kg, 10.14 kg, 7.13 kg, 47.07 % and 33.14 %, respectively. In conclusion, the Hainan black goats at the growing stage had a higher dressing percentage and higher meat yield and that all the indexes for the meat quality fell within anormal range.
