摘要
在制糖过程中,葡聚糖对用旋光法测定的蔗糖含量有影响,本研究探索了样品中的葡聚糖对蔗糖定量测定的影响情况。实验结果表明:一是样品的糖度测定值随葡聚糖含量增加而虚假增加,且各种样品增加数值不同,对于初压汁,葡聚糖含量每增加100mg/L,糖度测定值增加0.04;对于清汁,葡聚糖含量每增加100mg/L,糖度测定值增加0.09;对于糖浆,葡聚糖含量每增加100mg/L,糖度测定值增加0.10;对于白砂糖规定量测定,溶液中葡聚糖含量每增加100mg/L,糖度测定值增加0.12。二是样品的蔗糖分测定值随葡聚糖含量改变而基本不变,即用二次旋光法基本可以消除主要的非蔗糖旋光物质-葡聚糖的影响。
In the process of sugar production, glucan affect the determination result of sugar.The amount of glucan is menstruated in the sample of sugar-refinery which included first pressured juice, clear juice, Sirup and White granulated sugar. The result showed that: (1)The sugar degree of the sample increased when the amount of glucan increased, but the amount of increasing is different. When the amount of glucan increase every 100mg/L, the sugar degree of first pressured juice increase 0.04, clear juice0.09, Sirup0.10, White granulated sugar0.12; (2) Sucrose % barely change with the different quantity, which is also mean that we can eliminate the influence of the non-cane sugar but optical rotated subject -glucan through using Second Polarimetry.
