摘要
研究了脱脂乳和乳清对连苯三酚在碱性条件下自氧化的影响。结果显示,脱脂乳或乳清可显著提高连苯三酚自氧化速率,推测可能同乳过氧化物酶有关,而经70℃以上热处理可降低或消除乳的这种作用。
Effects on auto oxidation of pyrogallol under basic condition by skim milk or whey of Maiwa yak were assayed.Increased oxidation of pyrogallol were observede following the adding of skim milk or whey,and is suggested to be related to the function of lactoperoxidase in the milk,such effcet could be reduced by the heating of the skim milk or whey added over 70℃ for 10 min.
