摘要
利用红外光谱分析仪、X-射线衍射分析仪、偏光显微镜及扫描电子显微镜对不同取代度马铃薯淀粉辛烯基琥珀酸淀粉酯的物理、化学结构进行了表征比较。马铃薯淀粉经辛烯基琥珀酸酐(OSA)处理后,随着马铃薯淀粉取代度的增加:红外光谱图在1 724 cm-1和1 565 cm-1处产生了吸收峰,并与608 cm-1的吸收峰逐渐加强;X射线衍射图中淀粉微晶结构略有增加,亚微晶结构相对减少,总结晶度下降,但淀粉的结晶类型未改变;偏光显微镜观察显示部分淀粉颗粒偏光十字开始消失或者变的模糊,脐点处随之发生爆裂,裂缝甚至沿脐点向外扩大;扫描电镜观察显示淀粉颗粒表面被腐蚀程度逐渐增强。
The physical and chemical structure of the waxy corn starch octenyl succinate was compared by the FTIR, XRD, polarizing microscope and SEM. As the increasing of the DS of the Waxy corn starch,which was treated by octenyl succinic anhydride (OSA):it was found that new absorption peaks at 1 724 cm^-1 and 1 565cm^-1 and the absorption at 608cm^-1 was stronger and stronger;the crystallite of the product was increased slightly,the deuto-crystallite of the product and the total crystallinity was decreased, but there was no change on the style of the starch structure.It was also learned that Birefringence began to disappear, blowout occurred in the hilum and stomium became larger, the surface structure of starch granules was causised more and more seriously.
