变性淀粉是天然淀粉经过变性后得到的一类衍生物,由于其性能优异,在食品工业中作为添加剂而得到了广泛应用。综述了酸变性淀粉、氧化淀粉、酯化淀粉、醚化淀粉、交联淀粉和复合变性淀粉等变性淀粉的特点及其在食品工业中的应用,讨论了其今后的发展趋势,探讨了变性淀粉在食品工业领域的发展前景。
Modified starch is a type of derivatives which are obtained through modifying natural starch. It is widly used in food industry as additives for excellent properties. Characteristics and applications in food industry of modified starch, which include acid modified starch, oxidized starch, esterified starch, etherified starch, crosslinked starch, and composite modified starch ,were reviewed. Development trend and prospects of modified starch in food industry were also discussed.
