摘要
溴酸钾是一种面粉添加剂,由于其具有致癌性,我国从2005年7月1日起禁止在面粉及其制品中使用溴酸钾。因此建立一种准确、快速灵敏的溴酸钾检测方法非常重要,本文就结合国内外文献报道,阐述了面粉及其制品中溴酸钾检测方法的研究进展。
Potassium bromate is one of the flour additives. It has been prohibited in our country from July 1,2005 because of its carcinogenicity. It is significant to establish a precise,sensitive and simple method for the determination of potassium bromate. This article described the advances of research in the detection methods of potassium bromate in flour and its products.
