摘要
本文研究了甜玉米穗软罐头加工技术。刚采收下来的甜玉米穗,经去苞叶,清洗去须,蒸馏水预煮后,装入蒸煮袋真空封口,然后先采用温度115℃杀菌15分钟,再用温度120℃杀菌5分钟,就可制得甜玉米穗软罐头。
This paper studies the processing method of the sweet corn head with soft package.The frocess as follow:get off the bud leaves of fresh sweet corn head,wash off all the tassel of it,then boil it in pure water for short time,put the boiled sweet corn head into steaming bags,evacuate and seal the bags.Sterilize the esaled bags first in temperature 115℃ about 15 minutes,then temperature 120℃ about 5 minutes,cool it and end all prosess.
