含硫香料化合物3-甲硫基-1-己醇及其乙酸酯的合成研究

Study on Syntheses of Sulfur-containing Flavors 3-Methylthio-1-hexanol and 3-Methylthio-1-hexyl Acetate

本文以E-2-己烯醛为原料研究了3-甲硫基己醇及3-甲硫基乙酸己酯的合成方法。首先甲硫醇钠与E-2-己烯醛发生1,4-共轭加成得到3-甲硫基己醛,产率87%;然后用硼氢化钠还原得到3-甲硫基己醇,产率92%左右;3-甲硫基己醇在乙酸钠的催化下与乙酸酐反应,得到3-甲硫基乙酸己酯,产率约95%。产物结构经过GC/MS和1HNMR谱图进行了确认。

The Syntheses of sulfur- containing flavors 3 - methylthio- 1 - hexanol and 3 - methylthio- 1 - hexyl ace- tate were studied by starting from E-2-hexenal. The 1,4-conjugated addition of sodium thiomethoxide with E-2- hexenal gave 3-methylthio hexanal in about 87% yield; 3--methylthio hexanal was reduced by NaBH4 to produce 3- methylthio hexanol in about 92% 3-methylthio hexyl acetate was obtained by esterification of 3-methylthio hexanol with acetic anhydride catalyzed by sodium acetate in about 95% yield. The products were confirmed by GC/MS and 1 H NMR.
