泰州市餐饮业食品添加剂使用情况与监督管理对策 被引量:3

Usage of Food Additives in Catering Industries and The Supervision Measures in Taizhou City

摘要 目的了解泰州市食品添加剂监管现状,查找薄弱环节,旨在提高监管效果。方法泰州市卫生监督所设计餐饮业食品添加剂使用情况调查表,由经过培训的监督员对该市5635家社会餐饮、436家学校食堂、20家建筑工地食堂和279家其他食堂进行调查。结果泰州市餐饮业使用食品添加剂方面主要存在经营者和从业人员对食品添加剂知识欠缺,86%食品添加剂标签标识不符合法律、法规规定,19%采购食品添加剂未按规定索证,台帐记录不全,17%不按规范使用食品添加剂等问题。结论该市餐饮业食品添加剂超范围、超剂量不合理使用是主要问题,针对薄弱环节,泰州市卫生监督机构对餐饮业使用食品添加剂明确提出了监管对策。 [ Objective ] To understand the supervision status of food additives in Taizhou City, and find the weak links so as to im- prove the supervision effect. [ Methods ] Taizhou Institute of Health Inspection designed food additives questionnaire, and assigned trained supervisor to investigate 5635 social catering units, 436 school canteens, 20 construction site canteens and 279 canteens of other kinds. [ Results]The major problems existed in eatering industry of Taizhou City were the lack of food additives knowledge a- mong managers and employees, non-compliance of label with the law and regulations, 19% demanding food additives certificate with- out following regulations, incomplete account book, 17% using food additives without following laws and regulations. [ Conclusion] The major problems are food additives using out of range and dose. The health inspection agencies of Taizhou have proposed supervi- sion measures for the weak links clearly.
