摘要
本文从伯杰氏细菌鉴定手册[1]整理出常见啤酒有害菌的所属科属及其生理生化特性,并对适合检出啤酒有害菌的方法进行了探讨。试验结果表明,二氧化碳培养箱可以用于啤酒常见有害菌的检出。
According to Taxonomic Outline of the Prokaryotes Bergey' s Manual of Systematic Bacteriology,we listed systematically the relationship of the beer spoilage microorganisms and their physiological-biochemical characteristics. We also made further research on how to cultivate them. The result showed that CO2 incubator could be used to detect the beer spoilage.
