摘要
研究了水湿热处理时牛奶纤维的失重和化学组成的变化。牛奶纤维耐湿热性较差,在温水和热水中处理时即发生失重,其失重率随着处理温度的升高和时间的延长而增大。紫外吸收光谱和红外光谱分析表明,其失重是由于酪素蛋白的溶失所致。
Milk fiber was treated in warm and heat water, and its weight loss and changes in chemical composition were investigated. It was found that milk fiber had poor resistance to wet heat and exhibited high weigh loss in warm and heat water, and the weight loss increased with the increase in treatment temperature and time. The analyses of ultraviolet and infrared spectra showed that the weight loss of milk fiber treated in warm and heat water was induced by the dissolution of casein protein.
