摘要
介绍了过热蒸汽干燥的原理,对比分析了过热蒸汽和热风干燥在热利用效率、干燥成品品质及在热敏性食品中的应用、干燥速率及设备要求方面的优缺点,论文还论述了过热蒸汽干燥模型的建立,介绍了过热蒸汽干燥的理论研究现状。
The principle of superheated steam drying (SSD) was introduced in this paper.The characteristics of SSD,such as the thermal efficiency, product quality, applications in heat- sensitive food, drying rate, equipment requirement ,energy recycle of used gas were analyzed by comparing with hot air drying.The mathematic models and development trend of SSD were reviewed as well.
