摘要
南瓜籽粕是南瓜籽榨油后的副产物,经测定约含41%的粗蛋白。以水解度为考察指标,南瓜籽粕蛋白为底物,木瓜蛋白酶和AS1.398蛋白酶双酶为水解酶,由实验得出双酶水解的最佳工艺参数是:双酶质量比1∶1,加酶量19%,底物质量浓度35 mg/mL,温度50℃,pH 7.0,水解时间3 h。
Pumpkin seed meal , the byproduct of pumpkin seed oil preparation, contained 41% crude protein. The degree of hydrolysis used as a target, pumpkin seed meal used as protein substrate, papain and AS1. 398 protease used as the tool enzyme, the enzymatic hydrolysis of pumpkin seed meal was studied. The results showed that the optimal conditions were as follows : mass ratio of papain to AS1. 398 1 : 1, enzyme dosage 19% , substrate mass concentration 35 mg/mL, temperature 50℃, pH 7.0 and time 3 h.
