摘要
[目的]为东北刺人参的开发利用奠定基础。[方法]分别用氨基酸自动分析仪和原子吸收分光光度计测定东北刺人参中多种氨基酸和元素的含量。[结果]东北刺人参茎和根的氨基酸总含量分别为3.613 5%和3.290 6%,天冬氨酸、谷氨酸、亮氨酸、苏氨酸、缬氨酸、蛋氨酸、异亮氨酸、苯丙氨酸、赖氨酸的含量分别为0.450 1、0.448 6、0.302 1、0.201 6、0.225 9、0.039 0、0.174 4、0.208 2、0.250 2和0.347 6、0.403 6、0.275 2、0.172 7、0.213 4、0.039 4、0.157 0、0.180 1、0.243 9 mg/kg,必需氨基酸约占氨基酸总量的40%。东北刺人参茎的元素总含量比根高。东北刺人参茎和根中常量元素Ca、K、Na、Mg的含量分别为15 045.19、3 698.97、1 310.95、474.23和14 326.47、1 957.22、1 438.51、586.36 mg/kg,微量元素Zn和Cu的含量分别为355.45、62.64和250.79、40.73 mg/kg。[结论]该研究为东北刺人参产品的开发研制奠定了理论基础。
[ Objective I The purpose was to lay a foundation for the exploitation of Oplopanax elatus Nakai. [ Method ] The contents of various amino acids and elements in O. elatus were determined with automatic amino acid analyzer and atomic absorption spectrophotometer resp. [ Result] The total contents of amino acids in the stems and roots of O. elatus were 3. 613 5% and 3. 290 6% resp. , their contents of aspartic acid, glutamic acid, leueine, threonine, valine, methionine, isoleucine, phenylalanine and lysine were 0.450 1, 0.448 6, 0.302 1, 0. 201 6, 0. 225 9, 0.039 O, O. 174 4, 0.208 2, 0.250 2 and 0.347 6, 0.403 6, 0.275 2, O. 172 7, 0.213 4, 0.039 4, O. 157 0, O. 180 1,0.243 9 mg/kg resp. and the necessary amino acids accounted for about 40% in the total amount of amino acids. The total content of elements in the stems of O. elatus was higher than that in its roots. The contents of macro elements Ca, K, Na and Mg in the stems and roots of O. elatus were 15 045. 19, 3 698.97, 1 310.95,474.23 and 14 326.47, 1 957.22, 1 438.51, 586.36 mg/kg resp. and their contents of micro elements Zn and Cu were 355.45, 62.64 and 250.79, 40.73 mg/kg resp. [ Conclusion] The research laid a theoretical basis for the development and preparation of prod- ucts from O. elatus.
