摘要
本文以中国期刊全文数据库为资料来源,检索1991年1月-2008年12月期间发表的相关文章,统计分析这些文献在时间、地区、发文单位、作者、内容、期刊等方面的情况,透视国内烹饪教育研究近20年来的历史发展状况、问题和走向。
Based on the sources of Chinese Journal Full-text Database, the paper tries to make statistical analysis of the relevant articles written by different authors from Jan. 1991 to Dec. 2008 in different areas, publications and contents so as to provide a perspective on the general situation, current problems and the trend of cuisine education research in the past twenty years.
