摘要
探讨了食醋生产过程中醋酸菌乙醇脱氢酶活性与产酸速率的关系,实验表明,醋酸发酵是靠醋酸菌细胞膜结合酶(ADH)进行的,是通过将乙醇氧化成乙醛的乙醇脱氢酶和将乙醛再氧化成醋酸的乙醛脱氢酶(ALDH)来完成的。在醋酸发酵过程中运用检测ADH的活力,确定菌株的发酵能力,保证生产顺利地进行。
Correlation between the alcohol dehydrogenase activity of acetic acid bacteria and acid-producing rate in vinegar production was investigated in this paper. The results showed that acetic fermentation is motivated by ADH, which carried out by alcohol dehydrogenase for transforming ethanol to aldehyde and by acetaldehyde dehydrogenase for transforming aldehyde to acetic acid. Detecting the ADH activity during vinegar production could know the fermented ability of the strain, ensure the production run smoothly.
