临安市2004~2008年山核桃制品的检测与分析 被引量:3

Test and analysis of products of hickory in Lin′an from 2004 to 2008

摘要 目的:了解临安市山核桃制品的卫生质量状况,为山核桃产业健康发展提供科学依据。方法:依据国家标准方法,对山核桃制品进行理化和微生物指标的检测。结果:2004~2008年共检测样品495份,合格率为93.9%,其中山核桃仁合格率最低为85.2%,酸价、过氧化值、大肠菌群均有检出不合格,超标率分别为3.1%、5.0%、7.1%。散装样品合格率(85.4%)低于包装样品(98.7%)。结论:临安作为山核桃制品产销大市,总体情况良好,存在一定量不合格产品,其中市售散装手剥山核桃和山核桃仁应成为监测重点。 Objective:To know the sanitary and quality of Lin′an′s products of hickory and to provide the scientific basis for the healthy development of hickory industry.Methods:According to the national standard method,the products of hickory have been tested physically and chemically and microbiology indicators has also been tested.Results:From 2004 to 2008,we have tested 495 samples,in which the rate of the qualified is 93.9% and the lowest rate for pecans is 85.2%.The samples have been detected unqualified in acid value,peroxide value,and bacterium with the rates beyond the standard are respectively 3.1%,5.0% and 7.1%.The qualified rate of bulk samples inspected(85.4%) is below the sample packing(98.7%).Conclusion:The condition of hickory products in Lin′an,which is a main production and sale city,is good,though there still exist certain unqualified products.The quality of bulk hand stripped pecan and pecans should be the focus of monitoring.
