南方葡萄冷藏保鲜工艺初探

摘要 不同地域、不同品种的葡萄,冷藏保鲜须有不同的工艺与之配套。项目课题组在岳阳县新墙镇清水村葡萄示范园实施的冷藏保鲜工艺研究表明,要做好南方葡萄冷藏保鲜,工艺过程的每道工序应环环相扣。主要要求有:入库冷藏葡萄质量、田间处理、入库前准备、快速预冷、合理码垛、库藏管理、定期检查与适时出库销售等。葡萄经预冷后上市,能延长10~15d的货架期,冷库保鲜期可达3个月左右,为葡萄种植户增产增收提供了技术保障。 The grapes of different regions, different varieties, cold storage must have a different process. Process of cold storage that implement in Yueyang Xinqiang Qingshui grape demonstration garden show: to make the South grapes cold storage, process of each process should be closely interlinked. Main requirements are: frozen grape quality and storage, field handling, storage preparation, rapid pre-cooling, reasonable palletizing, treasury management, regular inspection and timely outbound sales. After the grapes through the pre-cooling market, can extend 10 to 15 days of shelf life, cold storage shelf life of up to 3 months or so, provide the technical support for the grape growers increase production.
