摘要 动物血液是优质营养源,它几乎含有人类所需的全部营养物质。国人吃猪血豆腐的习惯已多年形成,而猪血豆腐卫生及安全又令人难以放心,因此开发盒装猪血豆腐,并对猪血豆腐加工过程中影响产品质量的关键环节进行研究,能提升血豆腐加工整体技术水平,推动行业快速发展。 Animal blood is a source of high quality nutrition, it contains almost all of the necessary human nutriments. The habit of Chinese people eating pig blood has been formed for many years, but the health and safety of pig blood is difficult to be reassured. Therefore the development of boxed blood, and the research of the impact on the key link of quality during the processing of bean curd and blood products can enhance the overall technological level of blood processing, and promote the rapid development of industry.
