摘要
概述了浓缩苹果汁的国际需求情况以及我国的生产现状,并指出棒曲霉素是危害其品质的主要因素。棒曲霉素具有致畸性和致突变性,对动物胚胎的影响尤为明显。最后讨论了如何在浓缩苹果汁整个生产过程中控制其含量。
This paper summarizes the international demand and domestic production status of concentrated apple juice, and points out that patulin is the key factor that can impair its quality. Patulin has teratogenicity and mutagenicity, especially on embryos. Finally discuss how to control its levels during the whole manufacturing processes.
