摘要
为了确保鳗鱼产品质量安全,借鉴发达国家先进的食品安全管理经验,结合国内鳗鱼加工的实际情况,探索建立以企业自检自控为主、多方(官方、协会和企业等)协作监控的安全卫生监控新模式,以期控制鳗鱼产品从"原料到市场"整条供应链中各种危害。
In order to ensure the safety and quality of eel product, we use the advanced managerial experiences in food safety from developed country for reference, and integrate them with the concrete conditions of eel processes in China. We investigate and establish a new pattern of giving priority to the self- inspection and self-control system for the enterprises, and assisting with the monitoring system in multi-side (official, association, and enterprise) cooperation. The various hazards of supply chain from "raw material to marketplace" of eel products are expected to reduce as the lowest degree.
