摘要
综述了亚硝酸盐残留检测方法的研究进展,分析比较了各检测方法的优劣及其应用前景。对于监控肉制品、乳制品和蔬菜中亚硝酸盐的含量,对检测食品的品质具有参考意义。
The determination methods of nitrite in foods were reviewed, especially meat, vegetable and diary products. Advantages and disadvantages of these determination methods of nitrite in foods were compared and analyzed, which provided references for the determination of nitrite.
