摘要
大米在储存、运输、加工等一系列过程中,极易受到各种真菌毒素的污染,真菌产生的毒素通过食物链的传递对人或动物的健康带来了急性或慢性危害。对大米中真菌毒素的种类、产毒菌株及其对人或动物的危害进行了详细的总结,并阐述目前已报道的生物去除真菌毒素的方法,利用生物方法来去除大米中的真菌毒素,既有效,又安全,有巨大的发展前景。
The contamination of mycotoxins in rice is a worldwide problem during storage, transportation and processing. Through the transmission of food chains, mycotoxins have brought acute or chronic diseases to humans and animals. The article summarized the types of mycotoxins, mycotoxins-producing fungus and their harms to humans and animals, systematically summed up the biological methods to remove mycotoxins. These methods were effective and safe, so their application prospect were analyzed as well.
