Complex crosslinked corn starch is widly used in food industry for excellent properties. The characteristics and applications in food industry of complex crosslinked corn starch, which include crosslinked starch, crosslinked etherified starch, crosslinked esterified starch and crosslinked oxidized starch, are reviewed.
