摘要
为开发利用野生植物资源,测定盐城市常见的5种野生蔬菜的可食部分的营养成分和硝酸盐含量。结果表明:5种野生蔬菜中营养成分和各类维生素的含量高于普通栽培嫩茎叶花菜类蔬菜,富含钾、钠、钙、镁、铁、铜、锌、锰、磷等矿质元素;硝酸盐和亚硝酸盐的含量低于国标限量标准,食用安全。
In order to develop and use the resource of the wild plants,by means of the analysis of the content of the nitrate and the nutrient components in the five wild vegetables in the city of Yancheng.The result showed that the content of the nutrient components and the primary vitamines in the five wild vegetables were higher than that of ordinary cultivated flower vegetables.They were rich in potassium,sodium,calcium,magnesium,iron,copper,zinc,manganese,phosphor and other mineral elements; The content ot the nitrate and the nitrite were lower than the national limts standards, they were sate to eat. The research provided the theory evidence for the further development of the wild vegetables.
