摘要
解决食品安全问题应从整个食品链角度去研究问题,HACCP体系的基本思想可以应用到整个食品链,从而成为政府监管食品质量与安全的重要工具,而食品链的HACCP体系仍然是以单个企业为基础的,它所存在的链条的各个单元之间的信息交流与沟通成为HACCP体系能否有效发挥作用的关键所在,建立食品安全可追溯制度是解决以上问题的有效途径,HACCP体系和可追溯制度相互依存。
It is well known that food security can be settled by consulting the researches and surveys in the field of food chain, therefore the basic theories of HACCP system can be employed as good means for government and authorities to monitor the quality and security of the food in the food chain. The fact is the HACCP system in the food chain is built on the basis of every single firm, therefore the effectiveness of HACCP system greatly rely on the successful exchange and interflow which can be ensured by the establishment of food traceability system in the field of the food security field within the food chain. HACCP system can co-exist and interact with food traceability system.
