摘要
通过对植物穿心莲的氨基酸组成与含量分析可知:半胱氨酸的质量分数最高,天冬氨酸的质量分数最低,以半胱氨酸、谷氨酸和亮氨酸居于前三位。并对其作用进行阐述,为扩大穿心莲在食品调味品、运动员的保健食品、功能饮品以及化妆品的加工制造等方面的开发利用提供理论依据。
The amino acid content and composition of plant Andrographis aniculata (Burm.f.)Nees showed that the amino acid content of Cys was the highest and Asp the lowest, the content sequence of 17 kinds of amino acid of which the former three were Cys, Glu and Leu. Their functions were formulationed in the paper, theoretical basis was provided for process and remould on plant Andrographis aniculata (Burm .f.)Nees as flavorings, health food and health drink of athletes, cosmetic etc.
