摘要
随着啤酒工业的迅速发展,啤酒工业应用酶制剂的领域也在不断拓展,酶制剂的应用不仅对稳定和提高啤酒质量有益,而且对改进啤酒酿造工艺过程、开发新的酿造原料、新产品的研发、降低生产成本具有重大影响。对啤酒酶制剂作用原理及应用效果进行了简要综述。
With rapid development of beer industry, enzyme is used in beer industry more and more. The application of enzyme could not only stabilize and improve beer quality but also play important roles in the innovation of beer brewing techniques, the development of new beer-producing raw materials and new beer products, and the reduce of production cost. In this paper, the working principles and the application effects of beer enzyme were reviewed.
