摘要 阐述了酱香型白酒生产发展历程、现状及在中国白酒工业中的地位,结合白酒企业生产现状对酱香型白酒的分类及基本工艺特点、质量风格特征、技术发展趋势进行了分析探讨;提出了促进酱香型白酒产业健康有序发展的科研思路和保障措施。 The development process of Maotai-flavor liquor, its present status, and its position in liquor-making industry in China were elaborated. The classification of Maotai-flavor liquor, its basic technical characteristics, its quality & style features, and its technical development trend were discussed through the analysis of the present status of liquor production in distilleries. Besides, the methods to advance orderly and health development of Maotai-flavor liquor industry were put forward. (Tran. by YUE Yang)
