摘要
阐述了酱香型白酒生产发展历程、现状及在中国白酒工业中的地位,结合白酒企业生产现状对酱香型白酒的分类及基本工艺特点、质量风格特征、技术发展趋势进行了分析探讨;提出了促进酱香型白酒产业健康有序发展的科研思路和保障措施。
The development process of Maotai-flavor liquor, its present status, and its position in liquor-making industry in China were elaborated. The classification of Maotai-flavor liquor, its basic technical characteristics, its quality ＆amp; style features, and its technical development trend were discussed through the analysis of the present status of liquor production in distilleries.
