摘要
固定化酶技术是酶工程的核心,渗透在现代各种工艺之中,成为不可或缺的工具。本文对其发展、优缺点和固定技术做了介绍,并简述了其在生物和食品方面的一些研究和应用。
Immobilized enzyme, lots of craftwork can' t carry on without it,is the central part of the enzyme engineering. Immobilized enzyme' s development, characteristic and the technology of Immobilized enzyme is available in this paper which also review some applyings in biology and foodstuff.
