红土晒烟调制期化学成分变化规律研究 被引量:1

摘要 为了解红土晒烟调制期间主要化学成分的变化规律,确定适宜的堆捂时间,通过设置不同的堆捂时间并每隔12 h取烟叶样杀青烘干,直至堆捂结束,测定杀青样化学成分,对红土晒烟调制期间主要化学成分的动态变化进行研究,结果表明:烟叶内含淀粉绝大部分是在堆捂期间降解的。堆捂开始后总糖含量迅速增加,总糖和淀粉含量变化呈极显著的负相关,相关系数r=-0.89。总氮和烟碱含量堆捂前后变化较小。较长的堆捂时间有利于烟叶化学成分的协调和烟丝品质的提高。中部叶和上部叶适宜的堆捂时间应不少于5天。 In order to realize the regularity of main chemical compositions changing in curing process and establish the appropriate curing hour for sun-cured tobacco, different time of stacking was set and certain leaves were sampled in kill-enzyme torrefaction at intervals of 12 hours until the end of stacking. Studies were taken at the dynamic changes of main chemical compositions at stacking stage; the results showed that most of starch in the leaf was degradative in the period of stacking. Total sugar increased rather fast after stacking had begun. The change of total sugar and starch content was contrary and had a significant negative correlation, the correlation coefficient r=-0.89. Both total nitrogen and nicotine content in leaf at the end of stacking stage changed less compared with those before stacking. Longer stacking was in favor of coordination of chemical compositions in tobacco leaves and improving the quality of cut tobacco. The appropriate stacking hour for cutters and upper leaves should be at least five days.
