Detoxification of mycotoxin by microorganisms in food and feed

摘要 各种霉菌毒素可以作为一种污染物广泛存在于食品和动物饲料中。此文对食品与饲料中霉菌毒素污染情况进行介绍,论述了霉菌毒素脱毒的不同途径和策略,并对微生物脱毒法的研究现状进行了概述。 Mycotoxins can be present as contaminants in food and feedstuffs. In this article, different physical and chemical methods and strategies are recommended for detoxification of mycotoxin-contaminated food and feed. It has been demonstrated that some microorganisms are able to detoxify mycotoxins and prevent their gastrointestinal absorption. This article summarized the researching status quo on detoxification of mycotoxins by microorganisms in food and feed.
