预测微生物学在食品质量和安全评估上的应用 被引量:1

摘要 预测微生物学是一门新兴的数字化、信息化的学科。通过这门学科,人们可以对食品贮藏流通过程中的质量和安全作出合理判断,确定加工、贮存、流通过程中可能导致食品腐败的关键点的缺陷,有利于在产品开发及改良中对工艺参数、产品配方的制定和微生物学质量的控制。
