摘要
微胶囊技术是21世纪重点研究开发的高新技术之一。概述了微胶囊技术的基本特点和意义、微胶囊化方法、壁材分类以及纳米微胶囊的制备技术,重点介绍了其在食品工业领域的最新研究进展及应用,尤其是对水溶性物质的微胶囊化、微胶囊化微生物、微胶囊技术在军用食品中的应用做了介绍。最后分析指出了微胶囊制备技术今后的发展前景。
The microencapsulation is one of new and high technologies in 21st century. The paper summarizes the basic characteristics and significance, its production methods, material classification and preparation technique of nano-microcapsulation, introduces its research progress and application in food industry, especially its application of water soluble materials microencapsulation, microencapsulation microorganism and microencapsulation technology in army foods, and points out its development prospect of microencapsulation preparation technology.
