纳豆菌固体发酵蚕蛹蛋白的研究

摘要 蚕蛹含有丰富的营养物质,尤其蛋白质含量较高,可以作为良好的培养基。本实验利用纳豆菌对蚕蛹进行固体发酵,目的是获得含有纳豆激酶酶活较高的发酵产物。结果表明:蚕蛹蛋白厚度0.5cm,葡萄糖2%,明胶1%,接菌量8%,37℃恒温发酵24h,产纳豆激酶酶活可达到786.36u/mL左右。 The silkworm pupa contains various nutrients, especially rich in protein and it can be used as a good culture medium. The study is aimed at obtaining product with the high nattokinase activity by solid-state fermenting with Bacillus natto. It is showed that the optimum fermentation conditions were as flows: thickness of culture medium: 0.5 cm, glucose: 2%, gelatin 1%, inoculation: 8%, incubation at 37℃ for 24 h and the activity of NK could reach 786.36 U/ml.
