摘要
结冷胶作为一种新颖的微生物多糖,在食品工业应用中具有多种优势,但目前结冷胶并没有在国内取得应有的市场效果,生产和市场推广都遇到了不少问题。阐述了结冷胶在国内的发展现状,并针对目前存在的问题提出见解,以期对国内食品相关行业和微生物胶体生产企业的生产经营和市场决策提供指导。
As a novel microbial polysaccharide,gellan gum has many advantages in food industry.But at present,gellan gum hasn’t achieved the expected effect in the domestic market;the production and marketing of gellan gum still has many problems.In the paper,the current situation and existing problems of gellan gum in China were summarized.Some views were presented so as to provide guidance to domestic food-related industries and micro-colloidal manufacturers.
