摘要
目的分析测定肉豆蔻果肉中的营养物质。方法以肉豆蔻果肉中的粗纤维、维生素C和蛋白质为指标进行测定。结果肉豆蔻果肉中粗纤维、维生素C和蛋白质含量分别为2.49%、0.0026%、0.0575%。结论肉豆蔻果肉中粗纤维含量高,且维生素C含量也较高,适宜加工成保健食品。
Objective To determine main components of Myristicafragrans. Methods With crude fiber, vitaminc and protein as indexes. Results In fresh pulp of Myristica fragrans, crude fiber, vitaminc and protein was 2.49%, 0.0026% and 0.0575 %, repectively. Conclusion M. fragrans contains rich crude fiber and vitamin C. It was suitable for processing: into heath food.
