摘要
对罗非鱼片的热风微波复合干燥的动力学进行研究。测定罗非鱼片先在40℃热风温度下分别干燥1h~5h,再在200、400W不同微波功率下干燥10min的水分含量,比较不同热风初步干燥的鱼片在不同微波功率下的水分含量的变化,分别建立罗非鱼片在200W和400W微波功率下的热风微波干燥曲线和干燥速率随时间变化的曲线,得出不同热风时间对鱼片的热风微波复合干燥中的水分含量及干燥速率的影响规律。
The dynamics of hot air-microwave drying (AMD) of tilapia fillets were investigated in this paper. Firstly, the moisture contents of test samples which were dried under different powers (200 W, 400 W) of microwave after hot-air drying at 40℃ for various times from 1 hour to five hours were determined. Secondly, the changes of moisture contents of samples dried under different powers of microwave after hot-air drying were compared. Thirdly, the drying curves and drying velocity-time curves were established, respectively. Finally, the effects of hot-air pre-drying times on the moisture contents and drying velocity of tilapia fillets during AMD drying were investigated.
