摘要
[目的]证明马尾松松针中抗氧化因子的存在及各因子与马尾松松针抗氧化作用的协同关系。[方法]以新鲜马尾松松针为试材,通过测定其提取液的过氧化值、酸价、VC、VE、VP和胡萝卜素含量研究了马尾松松针的抗氧化特性。[结果]与未添加马尾松松针提取物的油脂相比,添加了马尾松松针提取物的油脂在同一时间测定的酸价较小,其在不同时间测定的酸价变化值也较小。添加了马尾松松针提取物的油脂被氧化的程度远远小于未添加马尾松松针提取物的油脂。马尾松松针提取物的Vc含量为4.092mg/kg,VE含量为21.000μg/kg,VP含量为36.385μg/kg,胡萝卜素含量为10714.300μg/kg。各抗氧化因子对松针抗氧化特性都有协同增效作用。各因素的协同增效作用依次为:VC>VP>VE>胡萝卜素。[结论]马尾松松针含有抗氧化因子,可以作为功能食品的素材。
[ Objective ] The purpose was to prove the existence of antioxidative factors in the pine needles of Pintts massoniana and the synergetic relationship between each factor and their antioxidation. [ Method] With fresh pine needles of P. rnassoniana as tested materials, their antioxidant property was researched through determining the peroxide value, acid value of their extract and its contents of Vc, VE, Vp and carotene. [ Result] Compared with the oil without the extract from the pine needles of P. massoniana, the acid value determined at the same time of the oil with their extract was less and the change value of its acid value determined at different time was also less. The oxidated degree of the oil with their extract was much less than that of the oil without their extract. The contents of Vc , VE , Vp and carotene of their extract were 4. 092 mg/kg, 21. 000 μg/kg, 36. 385 μg/kg and 10 714. 300 μg/kg resp. All the antioxidative factors had synergistic interaction on the antioxidant property of the pine needles. The synergistic interactions of various factors were Vc 〉 Vp 〉 VE 〉 carotene in sequence. [ Conclusion] The pine needles of P. mossoniana contained antioxidative factors and they could be used as the original material of functional food.
