中国常用食品添加剂毒理学数据库研究 被引量:4

Study on the Toxicological Database of Main Food Additives Used in China

摘要 目的建立我国常用的食品添加剂毒理学数据库。方法通过文献检索的方式,收集相关的食品添加剂毒理学资料,利用系统文献综述(SLR)方法整理所研究的食品添加剂毒理学数据。结果数据库收录了20大类共374种食品添加剂,毒理学资料包括代谢、急性毒性、遗传毒性、生殖发育毒性、亚慢性毒性、慢性毒性和致癌、人群资料等7个方面。结论该数据库的建立有利于我国食品添加剂的安全使用、保护消费者健康,并促进对我国特有的食品添加剂的研究和应用。 Objective To establish the toxicological database of main food additives used in China. Method Related toxicology data of food additives were collected by literature search based on internet and systematic literature review (SLR) method was used to form the toxicological data. Results The database included 20 categories and 374 kinds of food additives. For each food additive, the toxicological data were composed of seven parts including the metabolism, acute toxicity, genotoxieity, reproductive and developmental toxicity, subchronic toxicity, chronic toxicity and carcinogenicity and human data. Conclusion The database will be helpful to the safe use of the food additives in China and the consumer's health, and promote the researoh and use of the food additives only used in China.
