摘要
综述了几年来国内铁强化酱油中乙二胺四乙酸铁钠的检测方法。科学评价了分光光度法、原子吸收法、极谱法、毛细管区带电泳法、高效液相色谱法、样品背景颜色的校正以及测定结果的卫生学意义。
To review the assay methods for detecting NaFeEDTA in iron fortified soy sauce.Spectrophotometry,atomic absorption spectrometry,oscillopolarograhy,capillary zone electrophoresis,high performance liquid chromatography,correcting background color of samples and the hygienic significance of detected results were evaluated.
