摘要
目的了解武汉市江夏区餐饮业生产经营单位使用食品添加剂的情况。方法结合卫生部9部门开展打击违法添加非食用物质和滥用食品添加剂的专项整治工作的开展,进行调查分析。结果辖区内常用的食品添加剂有增味剂、着色剂、防腐剂、品质改良剂、增白剂、食品香料、面粉改良剂、酶制剂等8大类及常用的顶好橙黄、好塔牌馒头改良剂、金泰牌松肉粉、果玉牌嫩肉粉、利泰来牌飘香粉、狮球牌吉士粉、天福牌日落黄、高活性干酵母粉等品种。整治前规范使用添加剂的餐饮单位仅占49.29%,整治后规范使用添加剂的餐饮单位上升到87.32%。结论未发现违法添加非食用物质的餐饮单位,餐饮业使用食品添加剂得到了明显规范。
[ Objective ] To understand the use of food additive in catering industry in Jiangxia District of Wuhan City. [ Methods ] The data collected in the special punishing illegal adding non - edible substance and abusing food additive organized by Ministry of Health and other 8 departments was analyzed. [ Results] Commonly used food additive in Jiangxia District were flavor enhancers, col- orant, antiseptic, modifying agent, brightener, food flavors, flour modifier, enzyme preparation and Dinghao Orange, Haota Steamed Bread Modifier, Jintai Meat Tenderizer, Guoyu Meat Tenderize, Litailai flavor powder, Shiqiu Custard Flour, Tianfu Sunset Yellow, highly reactive dried yeast powder. The proportion of restaurants that using food additive with standardization increased from 49.29% before the comprehensive improvement to 87.32% after that. [ Conclusion] No illegal using of non-dible substance has been found, the use of food additive is well regulated .
